Kale Blog Publicity - and another great pesto recipe

What a nice article about Ann Arbor's Westside Farmers' Market that includes a mention of us selling our garlic scapes plus my 365DaysofKale blog!

Be sure to read the article, which includes a wonderful recipe for pesto that includes garlic scapes with fresh peas. I'm just sure you could also throw one kale leaf in the food processor to make a different and still delicious variation. I can say that I have included fresh peas with avocado when making guacamole and found the mixture both delicious and beautiful, with the bonus of left-overs (rare to have any!) staying bright green for several days in the refrigerator.

I was just looking for ideas for the kale that is overflowing in my garden (first year growing, and I didn't know what to expect from 4 plants). I never would have believed there is a blog dedicated to kale! I'm planning to try freezing my kale without blanching first to see how that turns out and checking it in a few weeks - if it is a success, I will know what to do with the rest. Thanks for the kale tips!

I am so happy I found your blog. This is our first year of growing kale and I love it. I go out and grab a bunch of it for a salad every day. I just looked up on how to freeze it and I want to make some kale chips in the oven that I have been hearing about. I think I also want to try your kale pesto. It sounds delicious.

this is the first year i ever had kale. I made a soup and I made chips. its such a great veggie, never thought about growing it, i just might next year. oh and btw nice to meet a fellow michigander:)

Hello :)

I just found your Kale website while browsing the internet looking for Kale advice. I can't believe I found your blog!

My question is this: Can I freeze Kale without blanching? I wanted to use it in my green smoothies and know that if I blanch it first, it will be soggy before I get it into the blender.

What is your recommendation? Will not blanching my Kale make me ill?

Thanks for finding my blog. I have frozen kale both blanching and not blanching. Not blanching will not make you ill! Blanched kale lasts longer in the freezer because enzymes that break down cell walls have been inactivated. However using non-blanched kale for adding to soups, stir-fry's, etc where lots of cooking will still be done is fine. I have done it both ways. Bottom line, not blanching is far easier but will not "last" as long in your freezer as blanched kale. Please stop by again!
